Vanessa is the daughter of Coco Iniguez, founder at Coco’s Kitchen, and honed her restaurant experience under her mother’s mentorship. Stewart is the former owner of the asian inspired restaurant Boca Bento. Together, they also helm the esteemed Villa Limon boutique hotel and ZUMO restaurant in San Miguel de Allende.

A Fusion Symphony Conducted by Chef Oscar Ponce

The maestro behind Zumo’s flavorful symphony is Executive Chef Oscar Ponce. Chef Ponce honed his craft for two years at the helm of Zumo San Miguel, and his experience shines through in every dish. 

Originally from Guadalajara, he completed his culinary school training there. Before joining the ZUMO family, he worked in Barcelona, Spain for three years at a three-star Michelin restaurant. 

The menu showcases his creativity and passion, with highlights like al pastor croquettes – a delightful play on the classic Mexican street food – and a savory mushroom risotto paired with succulent brisket. Even traditional dishes like “carne en su jugo” get a Zumo makeover, featuring melt-in-your-mouth short ribs.

Seasonal Surprises and Signature Staples

Zumo keeps things exciting with a menu that changes seasonally, ensuring fresh, locally-sourced ingredients and innovative flavor combinations.

The waitstaff undergo a comprehensive month-long training program, ensuring they can expertly describe each dish on the menu and recommend the perfect wine pairing to complement your chosen flavors.  Whether you have questions about Chef Ponce’s culinary creations or need help navigating the extensive wine list, the knowledgeable staff is there to guide you with a smile.

If you’re visiting Puerto Vallarta during restaurant week (May 15 to June 10, 2024), be sure to take advantage of Zumo’s special three-course menu for only $575 pesos.
