Whiskey Kitchen, the popular comfort-food restaurant led by chef and owner Gina Rae, will close its Versalles location at the end of March and reopen days later at The Joint. Boutique Hotel in the Zona Romántica.
The restaurant’s final day of service in Versalles is scheduled for March 29, which also coincides with Rae’s birthday. The move is set for March 31, with a targeted reopening on April 3, pending final construction and setup.

The new space will feature a full bar, expanded seating for up to 80 guests and a private dining area, with additional design upgrades planned over time as construction continues.
Hours of operation are:
8 a.m. – Open for Coffee and Breakfast
Noon to 9:30 p.m. – Lunch and Dinner service
Bar – Open till 11 p.m.
Open seven days a week.
“We are moving Whiskey Kitchen! I said it… it is time,” Rae wrote in a message to customers posted on social media, calling the transition a necessary step forward. “It’s time to pivot and move forward.”
The new location will be inside The Joint. Boutique Hotel, taking over the former Café Rio and Atrium spaces along Insurgentes in the heart of the Zona Romántica, one of Puerto Vallarta’s busiest dining and nightlife districts.
Rae said the new space will allow for significant expansion and reconfiguration, including a dedicated bar and a larger dining area.
“Rio Bar will be our bar area, but I’m pulling out walls and it will have a heart now,” Rae told Out & About PV. “The atrium area is so big I’ll work on that too, but it will take time. I think we can seat about 80 when it’s all done and have a private room for dining too.”

The move represents a major step up in capacity for the restaurant, which has built a loyal following for its approachable menu and welcoming atmosphere.
Whiskey Kitchen first opened in Puerto Vallarta several years ago and has since relocated twice as the business evolved. Its most recent home in Versalles helped establish the restaurant as a neighborhood favorite, drawing both locals and visitors for brunch, comfort food and cocktails. The shift to Zona Romántica places it in a higher-traffic tourism corridor, where Rae said she hopes to reach a broader audience while maintaining the restaurant’s community-driven feel.
Rae emphasized that the transition is both a logistical challenge and a deeply personal milestone.

“This business is not easy, but it sure is in my soul,” she wrote.
In a reflection shared with customers, Rae thanked supporters who have followed the restaurant across its different locations.
“Grateful beyond measure for every single person who has graced our doorways,” she said.
For now, Rae said, the focus is on reopening quickly and continuing to build on the restaurant’s identity.
“It will take time,” she said of the renovations, “but it will have a heart.”
Whiskey Kitchen will operate its final weekend in Versalles with regular hours before closing for the move. If all goes according to plan, doors in Zona Romántica will open in early April.
