Let’s Pho, a Vietnamese restaurant that has quickly gained a loyal following in Puerto Vallarta, was named a finalist for the “Favorite Specialty Cuisine” award at the We Are PV awards.
Owner Charlie Huynh is thrilled about the recognition, but told O&APV that his true focus lies in fostering a welcoming atmosphere.
“We’re so grateful to be nominated,” Huynh beams. “We’ve poured our hearts into creating a space where everyone feels like a friend.”
This dedication to genuine connection is a key ingredient in Let’s Pho’s success.
“We don’t just serve food,” Huynh explains. “We build relationships.”
Huynh, a self-proclaimed perfectionist, meticulously trained his staff of 17, many with no prior Vietnamese culinary experience.
“Seeing them take ownership and experiment with flavors is incredibly rewarding.”
This dedication to fostering a culture of learning and experimentation is a key ingredient in Let’s Pho’s innovative approach.
But there are challenges abound in paradise. Sourcing authentic Vietnamese ingredients in Mexico requires resourcefulness, with Huynh personally making trips to Vietnam to secure the freshest spices and herbs.
“It’s a labor of love,” he laughs. “But we believe the quality shows in every bowl.”
Let’s Pho’s impact goes beyond taste buds. The restaurant actively supports local initiatives, particularly those serving the LGBTQ+ community.
“We’re a family here,” Huynh says warmly. “And families support each other.”
