Rico Indian marked its third anniversary Dec. 21 with a sold-out celebration on Isla Cuale, reflecting the restaurant’s steady growth and refinement since opening in 2022.
Chef and owner Mohnish Malhotra hosted the anniversary event, which highlighted both the restaurant’s culinary progress and its growing role in Puerto Vallarta’s dining scene. Over the past three years, Rico Indian has introduced menu updates, operational improvements and enhanced service, while maintaining its focus on traditional Indian flavors presented in a contemporary setting.
The anniversary celebration began at 6:30 p.m. and drew a full house. Guests were treated to a multi-course dining experience alongside live entertainment throughout the evening. Performances included appearances by singers Ada Vox and Kim Archer, as well as belly dancing woven through the dining room and a fire dance show staged in honor of the winter solstice.
Located on Isla Cuale and accessible from Insurgentes 437, Rico Indian has become known for pairing elevated Indian cuisine with an intimate island setting. The anniversary event underscored the restaurant’s evolution from a new concept to an established destination for both residents and visitors.
Malhotra said the milestone reflects the support of the local community and the restaurant’s commitment to continued improvement as it enters its fourth year.
