New Brick Oven Restaurant Brings Unique Flavors to Puerto Vallarta

A new restaurant, The Brick Oven, is set to open in Puerto Vallarta’s Romantic Zone on Saturday, May 17, 2025, promising to elevate traditional pizza with its custom-built, wood-fired brick oven and unique ownership.

Located at Basilio Badillo 447, the restaurant’s centerpiece is its traditional wood-fired brick oven, a feature that distinguishes it from many other Italian eateries in the area. According to co-owner Brian Kent, the oven’s intense heat, reaching between 800-900°F (427-482°C), is key to the pizza’s unique characteristics.

“The wood-fired oven gives our pizza a smoky flavor and a crust that’s crispy on the outside and chewy on the inside,” Kent said. “It also cooks the pizza very quickly and evenly.”

The oven’s design and the use of wood as fuel contribute to this distinctive result. The dome shape and brick construction ensure even heat distribution, while the wood smoke infuses the pizza with a subtle, earthy aroma.

The Brick Oven’s initial menu features a curated selection of pizzas, each crafted with high-quality ingredients and a focus on flavor profiles:

  • Margarita: Classic flavors of fresh basil, Buffalo mozzarella, cherry tomatoes, house pesto sauce, and house balsamic.
  • Four Cheese: A rich blend of ricotta, gouda, mozzarella, and parmesan.
  • Pineapple Mushroom: A combination of sweet and savory with pineapple, mushroom, and spinach.
  • Burrata Rocket: Features creamy burrata, pesto, rosemary, Serrano ham, and arugula.
  • Garden Hamlet: A savory mix of goat cheese, mozzarella, spinach, prosciutto, and sun-dried tomatoes.
  • All Meat: For meat lovers, with mozzarella, spicy house sausage, salami, and pepperoni.
  • Sweet and Spicy: Jalapeño, onion, garlic, salami, honey, and mixed peppers create a balance of heat and sweetness.
  • The Vallarta: A local inspired combination with grilled marinated shrimp, onion, bell pepper, and mozzarella.
  • Chicken Blue: herb marinated chicken, blue cheese, mozzarella, mixed peppers.
  • Pepperoni: Classic pepperoni.

Beyond pizza, The Brick Oven will also offer a range of antipasti, salads, and desserts, including classic Italian options and creative twists, complemented by a full bar.

The Brick Oven is the latest venture from a group of established Puerto Vallarta entrepreneurs: Bryan Stocks, Roger Allen, and Brian Kent. This trio is also behind popular establishments such as One Six One, The Porch, and The Social Club, showcasing their diverse experience in the city’s hospitality sector. Their shared passion for creating inviting and memorable spaces has been a driving force behind this latest project.

The partners met through a mutual friend, and their shared vision for a sophisticated lounge led to the creation of One Six One. This successful venture spurred them to collaborate on other projects, culminating in The Brick Oven.
