Evelina, one of the newest restaurants at Avida Market in Puerto Vallarta’s Emiliano Zapata neighborhood, is putting handmade pasta, carefully crafted doughs and thoughtful cooking at the center of its menu.
O&APV Publisher Jerry Jones visited the restaurant with friends Saturday, March 7, and said the food and hospitality made for a memorable evening.
Evelina is led by chef-owner and executive chef Maycoll Calderón, whose culinary career has included restaurants in Mexico and the United States. His cooking focuses on simple, quality ingredients elevated through technique, with Evelina emphasizing handmade pasta, doughs and wood-fired cooking.

During the visit, Jones also met Chef Sergio Rios, who was part of the culinary team working behind the evening’s meal.
The meal
The dinner began with the Grilled Avocado — ginger, lemon, basil ($225).
“A bright, flavorful appetizer and a great start to the meal,” Jones said.
The group then ordered three handmade pastas:
- Mafaldini — almond pesto, pine nuts, greens, parmesan ($265)
- Paccheri — tomato sauce, burrata, basil ($325)
- Agnolotti — sweet potato, ricotta, squash ($295)
“All three pastas were excellent — fresh, perfectly cooked, and generous portions,” Jones said. “For the quality and creativity, the prices are very reasonable.”

The surprise of the evening came at the end. Although the group was already full, Chef Sergio Rios encouraged them to try the brioche with goat cheese and honey.
“We’re so glad he did,” Jones said. “It was unique, balanced, and absolutely delicious.”
Service adds to the experience
Jones also praised the restaurant’s service.

Aldo Archer assisted the waiter throughout the meal, while manager Antonio Viramontes stopped by the table several times to explain the dishes and share the story behind the menu.
“That personal touch made the evening even better,” Jones said.
Avida Market, located at Insurgentes 193, is part of Avida Residences, a residential development that incorporates a culinary market and restaurant space. Evelina adds a chef-driven concept focused on pasta, dough and fire to the growing dining destination.
For Jones, Evelina is already worth putting on the Puerto Vallarta dining list.
“If you love handmade pasta, thoughtful cooking, and great hospitality, Evelina is definitely worth a visit,” he said.
Jones noted that the restaurant has already become popular and recommends making a reservation.
